Autioneer
http://wow.curse.com/downloads/wow-addons/details/auctioneer.aspx
It monitors the auction house to show you what items are going for, whether you will make a profit, or if you are paying too much. Basically if you are seriously playing WoW, you have auctioneer.
QuestHelper
http://wow.curse.com/downloads/wow-addons/details/quest-helper.aspx
This addon shows you exactly where to go for your missions. One of my dislikes of WoW was having to carefully read the mission & then tracking down the mission's location. The addon not only tells you where to go, it also gives you an idea of how difficult is.
Those are the only two I used. If you are a 'tank' in the game then you will want a threat meter which will tell you how focused the enemies are on you compared to your team.
Basically, the place to go for addon's & their rankings is www.curse.com

Auctioneer - Can't live without this as it helps me get a decent price for my finds.
Questhelper - Easy way to organize yourself and get the quests done quickly. I love that it gives map directions so you know exactly where to go, especially when you're questing for the first time in a new area.
Grid - So handy for healers. It places a block of players in your group/bg/raid just above your action bar, so it makes it easier to see who is a) in range, and b) needs healing or a debuff.
X-Bar - So valuable, especially if you're a hunter. It provides additional bars with spells inplace, so you can free up room on your action bars.
Trinket Menu - So wonderful to use if, like me, you have numerous trinks for various parts of the game (ie different ones for pvp and pve). It switches trinkets out when the cd is up.
Omen - Vital for raids and groups. Helps you see your damage placement easily, so you can hold off if you're causing too much threat.
Recount - Nice to see the dps stats after killing a boss.
Spam Sentry - The god of all addons. It stops those horrible spam, gold selling messages coming through.
Alpha Map - A nice opaque map you can put up when you're running around.
Atlasloot - Who doesn't like to know which mob or boss drops the best items, or who to grind rep with. This addon is such a time saver and, for me, decision maker.
I think that;s about it. There's a wonderful one for arena which tells you what class your up against when the doors open. I can;t for the life of me recall what it is called though.

1. Recount: If you're in a raid, this answers the question of "how was my dps?" Also, keeps track of the top mobs hit, the spells used, and a bunch of other great statistics.
2. WoWHead Client: Because almost everyone uses WoWHead, having the client keeps track of mob information and quests, and then uploads it to WoWHead once you're done. The more people who use it, the better the info on the site is.
3. Deadly Boss Mods: Raiding can be ugly. Raiding in PUGs is scary. This gets rid of some of the scary by warning you about boss cooldowns, phase changes, and other elements of boss fights that could otherwise kill you or wipe your group - both in dungeons and raids.

I get all my addons from cursegaming.com. Some of my favourites are: Auctioneer - Can't live without this as it helps me get a decent price for my finds.

I only have 3 - 1.
