Here is what the French Wikipedia says:
"Un échanson était un officier chargé de servir à boire à un roi, un prince ou à tout autre personnage de haut rang. En raison de la crainte permanente d'intrigues et de complots, la charge revenait à une personne en qui le souverain plaçait une confiance totale. L'échanson devait en particulier veiller à écarter tout risque d'empoisonnement et parfois même goûter le vin avant de le servir."
You can probably make that out or translate it. It basically means the guy who looked after the King's wine and drinks. In English it would be the Steward, in the old knightly tales. He was a high ranking official of the court, totally trusted, because his job included making sure that the King did not get poisoned. In English the Steward came to have other meanings and declined over time, échanson is more like the King Arthur version.

An "Echanson" is a part of the royal court, in charge of serving wine to the king. It's equivalent to a butler, though perhaps more important: the echanson was responsible for making sure that the wine wasn't poisoned. "Cupbearer" is another translation.
