It might be downloading these patches to support some Office 2007-specific features in the newest IE.
For example if IE 8 allows you some special handling of Office 2007 documents, even if you don't have 2007 installed, it might try to update these in case there's been some security hole revealed.

1) Microsoft wants you to get it.
2) You may have it in trial version (never activated) on your recovery partition as well as in your Windows .cab files.
3)You probably have "Express" chosen when you go to the Automatic Update site. Choose "Custom" instead and don't select any Office updates before going to "review and install updates." If they're checked when you get to review and install, uncheck them before you click on install.
4) If you find yourself needing an office suite but do not wish to pay Microsoft, go to
http://www.sourceforge.net
and download Open Office. Alternately, you can google "open office" (in quotes) and download it. While donations are suggested, you're not obligated or even nagged to pay.

Why does Windows Update often want to download patches for Office 2007 when I don't have it?
I'm still using Windows XP and Office 2003.
I prefer to avoid downloading unnecessary junk if I can avoid it. Is there any reason why I'd need these patches for Office 2007?
