The purpose of an archaeology course is to teach you all the essentials for being proficient in the subject, both in the research realm and in the field. Field work often involves land surveying and mapping. If you do not learn these essentials in a classroom setting, you will most certainly learn them out in the field.
Field digs in archaeology courses usually split up into more than one section. There is a digging section, there is a place where members of the dig might take turns bagging, labeling and categorizing the finds on the dig, and then there is nearly always a geological surveying section. This is vital to any good archeological expedition because it allows archaeologists to develop a map of sorts for what they find in each area they dig in, and for every layer of rock and soil they may dig up or through.
Other than the field skills, the other essential skill you need to be an archaeologist is a fantastic memory. Archaeologists are expected to know a great deal about different periods in history, and not just from textbooks, but also from examining actual artifacts from a period and identifying materials, artwork and architecture. You will also need to learn several different languages, both current (French or German, for example) and dead (such as Latin or Ancient Greek).
