"Wiki farm" that allows you to intuitively create categories (and make your wiki private)?
I'm looking for a wiki farm (free or paid service) that allows you to create a complex system of categories in your wiki. Like this:
Category:Entertainment (parent)
Category:Night Life (sub category)
Category:Bars (sub-sub category)
...and additionally allows you to pin any of these categories to any page.
I see that Wikia has a great functionality in this regard, but it doesn't appear you can make Wikia wikis "private." PBWiki, Wetpaint, etc., do not appear to have this functionality.
Am I missing something? Thanks in advance.

Separate topics with commas, or by pressing return. Use the delete or backspace key to edit or remove existing topics.

I use Wikidot.com. Wikidot has the private wiki and category features that you are looking for. You can use tags to have an arbitrary number of tags, and/or you can use a "category:page" naming convention for organizing your content. Wikidot provides powerful ways to organize and display your content whether by tag or by category.

From what I understand, Wikidot does not actually have the category features I'm looking for.
Wikidot allows you to create new categories like this:
NewCat:Page1
Where "NewCat" is the category name, and "Page1" is the first page in that category. However, any given page can only be in one given category, and there is no way to create categories within categories (or sub-categories).
I'm trying to set up categories like this:
Entertainment> (category)
Nightlife>> (sub-category)
Bars>>> (sub-sub-category)
Maloney's Bar (page)
And also let that page simultaneously exist in any number of other nests of categories, like this for instance:
LA> (category)
Westwood>> (sub-category)
Wetwood Bars>>> (sub-sub-category)
Maloney's (page)
Is a full upload of MediaWiki to a domain necessary to do this?
