Why is it traditional to make pork and sauerkraut on New Year's Day?

Is New Year's Day the only day that is considered traditional for pork and sauerkraut? How do I make pork and sauerkraut? Can I make sauerkraut without it smelling up my house? Can I make pork and sauerkraut in a slow cooker?
