M$The barley used in this beer is not malted as it is with other types of beers. You perhaps have had Porter style beers, that use a type of malt (germinated barley) that has been roasted at lower temperatures - in that case, the beers have a more brown color but do not have the smokey overtones of a Guinness Stout.
I have posted a resource for a discussion forum by brewmasters that discusses the details of making a clone to Guinness for your information. There are other ingredients like Irish Moss, which I believe give it the earthy flavor.
