Why is Guinness black?

Tip for best answer: M$2.02
Separate topics with commas, or by pressing return. Use the delete or backspace key to edit or remove existing topics.

You can leave an optional "tip" with Mahalo's virtual currency, Mahalo Dollars. If you are asking a difficult question that might require some research, or if you'd like a wide variety of feedback, a higher tip often leads to more answers to your question.

According to Guinness website at http://www.guinness.com/en-us/faqs.html, Guinness is actually dark ruby red instead of black. They have this distinctive color because they roast the malted barley. As written in Wikipedia, only a portion of the barley is roasted.

Guinness stout beer is dark because it uses barley that has been roasted at high temperatures which turns it black and gives the beer its smokey flavor. During the brewing process, the black colors leach and dissolve from the roasted grain into the liquid phase.

The barley used in this beer is not malted as it is with other types of beers. You perhaps have had Porter style beers, that use a type of malt (germinated barley) that has been roasted at lower temperatures - in that case, the beers have a more brown color but do not have the smokey overtones of a Guinness Stout.

I have posted a resource for a discussion forum by brewmasters that discusses the details of making a clone to Guinness for your information. There are other ingredients like Irish Moss, which I believe give it the earthy flavor.
