Back in the times of the roman empire pigs were spit roast whole at special occasions but the Romans were an unusual bunch and several parts of the pig were eaten as delicacies as hors duves such as the ears, nipples and especially the tongue.
Because the tongue was often removed before the pig was presented at the spit roast the chefs needed to come up with an idea that prevented the guests from looking into the mouth were there was a large part of trachea and windpipe visible because of the removal of the tongue.
One roman Chef (Apicius) came up with the idea of making the pig look as if it had been caught and killed by surprise whilst it was eating to make it look fresh and to conceal the missing tongue they put an apple in its mouth.
The tradfition stuck and 2000 years later we still put an apple in a spitroast pigs mouth.
