Why does animal poop make good coffee beans?

I used to be a big coffee drinker until I discovered that some expensive coffees are made from the feces or poop of animals (like monkeys or cats). What is so special about excrement from animals? Nobody eats them outside of coffee so why do they become such great coffee beans?

I had first heard about coffee beans from animal poop in a local TV program and I really became interested in it. I almost can’t believe it at first because I can’t think how animal feces could turn into coffee beans. That’s almost impossible to believe in but it is possible. In fact, it has been known to be the most expensive coffee in the world. This said coffee is from an Asian Palm Civet that’s also known as Toddy Cat. They like to eat red coffee berries and beans and in the jungles in which they are living, they would find the sweetest and ripest ones to munch with their cute little faces. They cannot digest them so they would come out as poop. It has been said that the enzymes in this cat’s tummy break down the coffee’s bitterness and making the pooped beans extremely delicious. People would take the poop home, wash it lightly, roast it, ground it and you now have the most delicious coffee in the world. Those who have tasted it say it tastes like caramel and chocolate. It this Kopi Luwak as called sells for about $30 a cup in select coffee shops – making it the most expensive coffee in the world indeed.
