Why do cookies flop when cooling?

I have a great cookie recipe that produces the yummiest white chocolate and macadamia cookies ever. The cookies go into the oven and rise gorgeously. But no matter how slow or fast I cook them, they always seem to drop/fall/flop as they cool. Is there something I might be doing wrong?

Separate topics with commas, or by pressing return. Use the delete or backspace key to edit or remove existing topics.

You can leave an optional "tip" with Mahalo's virtual currency, Mahalo Dollars. If you are asking a difficult question that might require some research, or if you'd like a wide variety of feedback, a higher tip often leads to more answers to your question.

There are a few things that can make cookies go flat, such as too much liquid (did you change your brand of butter? Some have a higher liquid content than others), the wrong type of baking sheet, old leavening agents that won't work as well as fresh, a high sugar content, wrong baking temp.

I found a link that gives plenty of tips on how to make perfect cookies (or so the site claims!), maybe there will be some information here to help you.

I'm not sure I understand what you mean by "drop/fall/flop," but if you mean they bend as they cool, that is perfectly normal. When cookies are hot and fresh from the oven, they are quite flexible - if you keep them on the cookie sheet until they are slightly cooler, they're less likely to bend while cooling.

I hope that helps!
