Basically, because the slaves who were being freed from Egypt were the Jews, not the Christians - the Christians didn't come along until after Jesus was born quite a while later.
The story goes (if Metallica serves me right) that The Angel of Death would come to claim the first born son of everyone who did not paint their door with lamb's blood - and Moses only told the Jews to do this as The Angel was the final curse from God on the Pharoh and the Egyptians. Whoever had lamb's blood painted on the door, the Angel would "pass over," leaving the family unharmed - so namely, the Jews were unharmed.
Because the Pharoh's first born son was taken by the Angel, he finally freed the slaves - only to turn and chase them to the Red Sea where he planned on killing all of them. But God had one more trick as he (oh yeah, and Moses) parted the Red Sea to allow his people to pass thru unharmed.
That's my fave story from the Bible - Old Testament baby - that's where the action is!!
