This is just my opinion and I can't speak for the author of the Twilight series, but I don't see why any woman would want to be with a man who turns into a dog. Vampires are sexy - mind you the Lestat, Armand, Louis that Anne Rice so lovingly gave her readers were by far sexier, but Edward isn't too shabby either.
The vampire offers eternal life and has a dangerous and mysterious aspect a wolf could never compare to.
Besides, when it came down to business wouldn't Jacob freak into a werewolf transformation, leaving Bella in the middle of bestiality? Now, that would be the opposite of sexy - sick. Edward is the only choice.
