Why did Apple start producing Intel-based Macs instead of sticking to their old way of making processors?

The older processors were taking to long to develop, so they just stuck a few intels together across there whole line of computers many years ago. This enabled Apple to also run the archaic, bug infested windows software on one of the two chips.
