Twin is derived from Old English, rather than Latin or Greek, probably because twins are common enough to have had an early, non-technical word. Three is pretty much cognate between Latin and Greek. Eight doesn't seem to have a Latin prefix, or it's the same for both. I don't think there are any documented births of nonuplets, but that's Latin, too.

M$In psychology, I've found that Latin is used quite often, but I've found an article that suggests that there is such a mix of Greek and Latin in the medical profession, that it can be very confusing.
The final answer... someone flipped a coin and took the latin.
I researched this and there was no answer I could find. This is my best guess as to why.
