Because they are generally served cut into thin slices, and are traditionally served cold. In other words:

"Cold cuts is a U.S. term that refers to cheeses or precooked or cured meat, often sausages or meat loaves, that are sliced and usually served cold on sandwiches or on party trays."

P.S. "Cold cuts are also known as lunch meats, luncheon meats, sandwich meats, cooked meats, sliced meats, cold meats and deli meats."

They are called cold cuts because they have been precooked, yet not heated again, and served cold. Cold cuts can be cheese or meats.

Yummy! Cold cuts...makes me want a sandwich...

But I do use "cold cut" roast beef, on french dip sandwiches, so maybe while not 'required' to be re-heated they are still good when you do reheat them.

They have to be stored cold or they get all nasty. And they're sliced with a meat cutter. Cold Cuts
