Which vegetables should be covered while simmering?

For simmering vegetables, I would say cover them all - it adds another cooking element as the steam helps maintain the temperature. But then I rarely simmer vegetables, I usually steam them - they taste a thousand times better when steamed.

I also believe they hold more nutritional value when they're steamed as well. Rather than cooking them in say, butter or boiling them in water. Though I'm not for certain, but I believe I heard that somewhere.

Actually, for vitamin content butter would be as good as steaming - the butter absorbs the vitamins.

When vegetables are boiled, most of the nutrients are lost.

I don't know about "should be" but I cover up all vegetables when I cook them. I find that it keeps in the flavors. I also don't cook most of my vegetables very much, I prefer them slightly crispy or crunchy. Doing them that way they keep most of their nutrition.

Ah I just posted below then read the rest of your post! I thought they held more nutritions when steamed.
