The plants that do best in a New Mexico garden are those that can endure dry, windy and hot conditions and those that can live on a minimum amount of water. Some common plants that will grow well in New Mexico are magnolias, bromeliads, palms, ferns and of course cacti. Additionally, Mexican sycamore, agave and poinsettia will flourish there also.
Cacti is one of the easiest and hardiest plants to grow in New Mexico like the prickly pear, cow's tongue and cholla. You can cut off or clip off just a part of various pads / growths and stick the bottom in the ground, water a couple of times and by fall you will have a growing cacti that takes root and is growing great on its own.
A great perennial is called the desert four o'clock. They grown from an underground tuber. The blooms open in one color and then fade to another as they age. It can cover a five foot space and is a spreading plant.
