Which Thai recipes use the Prik si-iew wan condiment?

What kind of peppers is used in making this condiment? What flavor does Prik si iew-wan contribute to Thai dishes?

Hello mmng23,

The Prik si-iew wan condiment is served along with specific dishes and it is used to provide a spicy chili pepper based flavor to dish. It is usually made and placed on the table and people can add it to dishes when they choose, however it is rarely used compared to other Thai condiments such as Nam pla prik. According to this link http://www.importfood.com/recipes/tablecondiments.html you can use jalapeno peppers when making it, and you just need to place 2/3 cup of peppers in a one pint jar and fill the rest of the jar with sweet dark soy sauce.

In this link http://www.bellaonline.com/articles/art32162.asp the author recommends using Prik Chee Fa also known as Thai Dragon chilies, but mentions that jalapeno peppers can also be used, the recipe is otherwise the same as the one mentioned above.
Prik si-iew wan can be added to Pad Si-iew as stated in the recipe http://www.nikibone.com/recipe/thai/padsi-iew.html it also can be added to Yum Neue which is spicy beef salad as in this recipe http://www.foodgeeks.com/recipes/20453. In this link http://www.regionalrecipes.com/article1049.html the author recommends using it with Mee Korat Phet which is a Thai hot noodle dish.
