Which part of the Scallions do you throw out and which part do you keep?

When preparing scallions you cut off the root end at the base of the bulb and throw that out. Most people use all of the white bulb and a good portion of the green hollow shoots. The white part is often sliced fine while the green shoots can be chopped into large sections. How much you use is often a matter of taste. The green shoots do not have as strong a flavor but add color and texture.
