It depends on what you are interested in. For example, Switzerland is a very beautiful country. Also, Lichtenstein is very beautiful, it is very small, but very interesting, with cool nature and towns. Like a fairy tale.
But if you want extreme and adventures, than you can choose Transnistria (it is situated in Moldova, unrecognized country between Moldova and Ukraine). People say Transnistria is still like in time of USSR. More civilized, but also exotic vacation places could be Ukraine, Belarus and Russia. You can read more about this countries in Internet. By the way, in Ukraine there is a special tour in Chernobyl zone, it sounds a bit crazy but really it is safe and very informative. Good luck!
