There are many different profitable crops found on Farmville. I located a list of profitable crops, in order of profit.
The most profitable crop in Farmville are peas. They only cost 190 and sell at 381; however, they have a 23 hour harvest time.
The second most profitable crop is asparagus. The asparagus plant costs 220 and sells at 357. It has a 16 hour harvest time.
The third most profitable crop are onions. Onions cost 170 and sell for 275. They have a harvest time of 12 hours.
The most profitable tree in Farmville is the Acai Tree. It costs 27 and gives you 158 in a two day harvest (79/day).
In terms of gaining experience points (XP), Black Berries are the best. Though they only offer one experience point per plant, the harvest time of the Black Berry is very short (so you still gain a significant amount of XP).

Your question really drives me to play Farmville again, haha, after I think nearly 2 months now. Yep, I just get busier now that I could not spend even a little time visiting my Farmville. I'm currently at level 58, just few plows away so I could reach level 59.
Back to your question, I wish you did include in your question what your current level is now so I can tell you what crops are available to you. If you are new yet then you should start on crops that you are allowed to plant, that’s the way to level up and unlock the crops. I cannot tell you in particular about the most profitable and fastest-growing crop because I haven’t unlocked all the latest crops yet. However, basing on my level I can tell you that the most profitable are the peas (and the purple pod peas after you have mastered the peas) in my own experience and based on my level. If you have Farmville then you can see what level you will need to unlock it. Just visit your Farmville market and check. It only takes 1 day and has 3XP so planting it not only gives faster money but also helps you level up faster.
