Though nations like US consume more flour per capita (and overall) than nations like India and China, and also have higher rates of obesity, I'm not sure there's any direct link, certainly not a provable one. Seems like a correlation rather than a causation.

I'd say a more likely suspect, just in talking about types of food ingested, would be corn rather than flour. Here, the US leads the world:

Great answer! On the obesity/health risks ... I think meat would be a better indicator than corn.
