I love Beavers Bend in Oklahoma. It has just enough hills for a flat land Texas girl. It has a variety of hiking trails of different lengths as well. Easy to get to, reasonable camping rates and spectacular views. A little further away so not quite as accessible for me is anywhere in Colorado such as the Rocky Mountain National Park.
