It started as a way to signal the band that the audience wanted an encore
People do it for many reason
It shows that all the people in the crowd share common ground because they all like the band they are seeing. Also it's a much more respectful way to show your appreciation since it doesn't drown out the sound of the performer unlike clapping.

Dang, you must have put a lot of research into this, I totally agree that it is difficult to trace. So most likely we will never know.
