where did "Lions Choice" get it's name?

Assuming you are referring to the St. Louis-based restaurant chain, Lion's Choice, which specializes in roast beef sandwiches. I believe the company is hopes the name will suggest that they serve only the best selections of meat. The original restaurant opened in 1967 in Ballwin, Missouri but it was called the Red Lion Beef House. Unfortunately, the reason they changed their name was not addressed on the company website.
