Where can I learn to cook with chillies?
I like hot dishes, but too hot is not nice either! I've really messed up on this a few times! Which chillies are extremely hot and which ones are milder? What are the quantities I should use cooking with chillies?

When cooking with chili peppers otherwise known as chillies you can use the hottest varieties in small quantities and still end up with a not so spicy dish. On the other hand, if you add too much of even a moderately spicy chili pepper you will end up with a mouth numbing dish. Remember, if you remove the seeds and inner portion you lessen the potency of chillies. In several curries you can add coconut milk, grated coconut and sometimes even yogurt to lessen the impact of chili pepper on the palate.
