Where can I learn how to cook with cornstarch?
What's the trick with cornstarch to make sauces, puddings, thick soups, sweets and fine cakes? I see it's being used reading the ingredients list on the packets. How can I cook these things myself?

Using cornstarch in cooking is easy if you know the trick. Cornstarch is used as a thickening agent and is commonly used in soups, stews, gravies and sauces to add volume and give the food some body. Cornstarch is also an ingredient that is sometimes found in baby powder.
Many people when using cornstarch, dump it directly into the food being cooked and stir it up. They generally end up with a messy bunch of lumps in the food that are basically impossible to get rid of. The trick to using cornstarch and getting no lumps is to add it to water first.
