If you want to learn about Turkish cuisine I suggest that you start at Wikipedia and check this link http://en.wikipedia.org/wiki/Turkish_cuisine here you will notice that some of the main dishes of this cuisine are kebabs, baklava and pilaf. If you want a list of popular Turkish dishes try this link http://www.allaboutturkey.com/mutfak.htm here you will find mentioned kofte, sis kebab, doner kebab and Hamsili pilaf.

Ingredients and features of Turkish cooking vary according to region, but often found in it are meat such lamb and mutton and vegetables such as eggplant, peppers, lentils and tomatoes. Another important feature of Turkish cuisine is the use of spices and nuts.
There are several websites with Turkish recipes but among these this website http://turkish.homestead.com/ has a wide variety which can be used to make salads, pilafs, pastries and desserts.
Also check this website http://www.turkish-cuisine.org/english/index.php as it has detailed information on Turkish cuisine, social culture associated with food, ingredients often used and history of this cuisine. A number of recipes are also listed here.
