Most large grocery stores should have an Ethnic or Asian food aisle that will have the nori seaweed sheets. You could try Albertson's, for example.
There is also apparently a store called 99 Ranch Market in Vegas that sells mostly Chinese, but also other Asian foods.
And a Japanese store called Nakata Market on Rainbow and Sahara. Since it's a Japanese store it would probably be a good place to go for nori.
