I can answer this without looking at the how to. This is how to make a new starter for sourdough.
You need to get a small crock or mason jar. Add 1 cup flour and 1 cup water and shake it well.If you want to try this you can oen it and loosly cover the jar and allow it to capture the natural yeast in the air.Now every 2 days add 1/2 cup water and 1/2 cup flour and mix well.do this for 2 weeks.You should see the mixture start to get bubbly and seperate a bit.
If you can not wait for the natural yeast to collect in the mixture,add 1 tsp dry yeast to the initial 1 cup and 1 cup.
I have used both methods.The best one with the best flavor in my opinion is to allow the natural yeast to do its work.
