When I install Safari 4, does that replace the webkit engine in other apps that use it e.g. Fluid?

According to MacGeekGab podcast 193, the answer is "yes". But the Beta comes with an uninstaller that restores the original WebKit.

So all apps that use webkit benefit from the new engine?

That's my understanding. Safari 4 replaces the existing WebKit with the new one. Note that one of the MGG guys had problems with iPhoto crashing when loading pictures from an eyeFi device. It's a beta, so some incompatibilities are to be expected, I guess. And, again, it provides an uninstaller to restore the previous WebKit.
