Cut the dahlia stems to six inches above the ground after the stems wilt from the fall frost. Dig out the dahlia tubers (the bulb-like root) after removing the stems. The best method of digging the tubers is by sticking the tines of a pitchfork under the plant and gently lifting them out of the ground. You will want to inspect the tubers to make sure none show signs of disease or pierced from the pitchfork. If you find any tubers with these signs, discard them.
It is best to cure the tubers for 3 to 5 days before placing them in storage. Cure them by setting them in a single layer on tray and placing them in a dry area. Brush off any dirt that remains on the tubers after the curing process and place them in a cardboard box filled with peat moss so they are not touching. Store the box in a cool, dark location that is approximately 40 degrees Fahrenheit. It is important that the tubers do not freeze during the winter storage period.
