The typical stuff pirates would have taken from their victims. Cash would have been gold and silver rather than paper money. The wealthiest travelers would have worn jewelry. Perhaps a pearl handed revolver or two.
On the other hand, not everyone agrees it was put there by pirates. The Knights Templar certainly had money. Anything they had left after making loans to you know who and being robbed could well be hidden somewhere.
