Depending on what sort of time crunch I'm in, I have different strategies. If I have no prep time, I'll pick up a hot rotisserie chicken and potato salad at the grocery store on the way home. Pasta, whether spaghetti, ravioli, or pierogies are quick and easy. Boil water, cook the pasta, heat up some sauce in the microwave, serve with a veggie or salad, maybe some bread. If it's just me, I keep some frozen dinners in the freezer to heat up in a pinch.
Tonight we're having a rotisserie chicken that I bought yesterday and pulled apart, so cold chicken, coleslaw, raw carrots, and potato chips. No cooking involved!
