I am a native of Dalian, China is considered by the Chinese to be a mid-sized city, (although it has a population of 6 million and is really about the same size as Chicago)
Take Dalian as a measurement stick, it is about average in terms of budget spending when it comes to traveling. On one hand, it is definitely a lot cheaper than Beijing, Shanghai, and Hong Kong. But it is more expensive than cities that are smaller than Dalian, such as............... say, Urumqi, Taiyuan, or Harbin. In terms of Beijing, Shanghai, or Hong Kong, (espcially Hong Kong, it is one of the most expensive city in the world) be prepared to spend as much as you would if you were visiting New York City or LA. But for the smaller cities are far cheaper.

Air tickets vary by season and location. Summer tickets cost more, direct flights will cost more as well. You can have direct flights from San Fran, LA, Chicago, NY, Atlanta, as well as Boston to the Big three cities in China, but if you are going elsewhere you would have to transfer flights(usually from Korea or Japan) and they would probably cost you 1,000 dollars for one way in summer, and usually around 600 or 700 in winter or spring.
Food will range as well. From extremely expensive to very very cheap. It all depends on what you would like to do.
Hotels are about the same as USA. For example, in Dalian a 3 star Hotels about 200 yuan per night. This will get you a pretty average hotel room. Foreigners are not allowed to stay in many of the cheaper hotels because of strict Chinese laws. Generally speaking and everything is significantly cheaper in rural areas. If you are visiting the rural area $20 per day will likely be enough for two people. In mid-size cities, around 50 dollars a day for the basic needs. And in Beijing, Shanghai, and Hong Kong, I'd estimate probably around 100-120 dollars a day.

M$Hongkong would say about 3500 HKD. stay around 4 nights but I already have made hotel reservation in expedia.com. Disneyland will cost $1000 in ticket. + there will be ocean park, dining and transport.
Shenzhen and Guangzhou about $6000 yuan. this because I haven't book the hotel and plan to rent an apartment in both city. Apartment with 2 bedroom about 200-250 rmb per day. most attraction places around 100 rmb. transport is cheap only we go by bus or mrt. taking a taxi would be expensive. Dining out is not expensive if you go to foodstall or food court. (not in restaurant). and you should consider shopping. pretty cheap and nice items found here. you will be amazed on how you spend on shopping.
