Flying is the best route, but the train is at least pleasant. You could try to drive down the coast, on Route 101, but I think the better part of that drive is further south. Neither Portland nor Seattle is really right on the pacific ocean, so you'll be looking at trees lining the highway, and the Tacoma Dome for a lot of the drive.
