I love cheese, I have tried probably one hundred different kinds and well, I'm entirely out of cheese ideas. What is the most obscure cheese you have ever tried? What did it taste like? This is not really obscure as we live in tropic and we don’t normally eat cheese, but I find that Americans or Canadians don’t use much edam cheese. Edam cheese is a Dutch cheese. It was introduced along with Dutch occupation in Indonesia. It is a popular cheese to make cookies such as kaastengels and many other savory cookies. Edam cheese is hard and very savory. Edam cheese is sold in a red ball shape. Sometimes they are cut in slices, especially here, because you only need a small amount of edam cheese to get the savory taste. Edam is not as strong as some cheddar but you definitely need to use it in moderation or your cookies will taste too salty. I often mix edam with cheddar in my cookies.
