Whats the history of the souffle does anybody know

I stumbled upon this tidbit, that may be of interest to you.:
"According to FoodReference.com, the word soufflé first appeared in English in Louis-Eustache Ude’s The French Cook in 1813".
It seems to me that no one is firm on the history of the souffle. And that it depends on what type of souffle you are looking for. From everything I've read they may have come about anywhere from 1813 -1845. It seems they just popped up one day and quickly were integrated into the menus at the time. Hope that helps!
