BAKED STUFFED SEA BASS
3 to 4 lb. cleaned sea bass
Salt and pepper
2 tbsp. lemon juice
1/4 c. butter
1/4 c. onion
1/2 c. celery
1/2 c. Havarti Cheese
1/4 tsp. thyme
1/2 tsp. parsley
1 tsp. salt
6 Slices bacon
Dry fish thoroughly and cover the inside with lemon juice, pepper and salt. Put fish on a buttered baking dish. Melt remaining butter in a non stick skillet and sauté chopped celery & onions until tender. Mix shredded cheese with herbs and sautéed vegetables and stuff fish and close. Wrap fish in bacon and tuck under. Bake at 350 degrees for 30-40 minutes or until fish can be flaked with a fork. Makes 4 generous servings.
