What's the best way of making a healthy version of garlic bread?
I want to make a really healthy version to have with dinner this weekend.

The easiest way is really to just modify the basic recipe.
Take a loaf of French bread and cut it in half length-wise.
Mix a small amount of butter (you can use something like low calorie, fat free spread or olive oil too) and either some minced garlic or a pinch of garlic powder together and spread it over the bread.
Broil it for a couple minutes (keep close watch) and you're done.
The thing about garlic bread is that garlic is very good for you so using minced garlic will provide the most health benefits.
For healthier bread, you can use whole wheat French bread or even gluten free bread from your local bakery.

I broil mine so the bottom is soft and the top is nice and crispy. Gotta be careful or it will burn fast.
