What's the best Mac OS X equivalent to Windows' Visual
TimeAnalyzer (http://www.neuber.com/timeanalyzer/)?

The program should capture application usage and ideally store data in a readable format so that I can crunch the statistics later with another program. Graphing computer usage/activity over time would be a big plus.

Give http://rescuetime.com a try. They will count your time used on multiple machines and support Windows, Mac, and Linux. Historical reports and graphs available on their web site.

A cool feature is that they track web sites/applications separately - time is not just attributed to the "browser".

Best program I've ever seen, fits the exact function of TimeAnalyzer (Maybe slight difference :). This OS X program is prettier though!

OS X's Built-in Activity Monitor also does something similair. I'm not 100% sure of its logging abilities, but I believe that it can save logs and usage history to disk. It has many advanced functionality of which I am not completely aware. A little more research into this program may turn up some interesting results. Using an Automator script to record and log data may also be an interesting option to use with Activity Monitor. Good Luck.

This looks like a moment-to-moment resource/CPU monitor, rather than a program that tracks application usage over time. It looks nice but I'm looking for something that logs actual application usage by minute, hour, day, week, month, etc. and can build a profile of usage over time (not just what's consuming CPU at the moment, but rather what programs am I using for how much time per hour, day, week, month, etc.)
