What's the best book for learning basic cooking skills?

I think the best book for learning basic cooking skills is: The New Basics Cookbook by Julee Rosso and Sheila Lukins. It is available at Amazon:

I would like to very, very strongly recommend that you learn to cook for 2 or 4 people before you attempt to cook for a crowd of 50. Because if you cook for 2 or 4 people, you can always rush for a take-away if you burn the food or put too much salt in.
If that happens with a crowd of 50, then a lot of food is wasted and the crowd goes hungry. So I would strongly recommend to first learn to cook recipes like Chili con Carne, Spaghetti Bolognese, a stew and Goulash for a couple of people before you attempt to cook the same recipe for 50 people!
As to the quantities, you just multiply the ingredients for the dish you want to make. So if you have a recipe for Chili con Carne for 2 people, then you multiply the quantities given by 25 for a crowd of 50. This will result probably in too much food, but better too much than not enough!

Please also organize at least 2 or 3 helpers if you cook for a big crowd, the chopping, the preparing, the serving and the washing up is too much for just one person. The big pots are very heavy!
