If you're just looking for an aux input, just about any after market stereo today should do the trick. I bought my current after market stereo in 2001 and I still use it (with an optional aux attachment) to play my iPod in my car, which is really just about all I listen to in my car. It's a Pioneer DEH-P3300.
I tried a few newer stereos that would take over the control of the iPod, but I really wasn't all that impressed. I don't recall exactly which models they were, but in my opinion they really did a substandard job of translating the iPod interface.

Based on the info you give, Crutchfield suggests you try either Kenwood Excelon KDC-X493 or Dual XHD7714.
I can say that I've been impressed with Kenwood in the past, but I have no experience with Dual. But really your best bet, IMO, is to get on http://www.crutchfield.com and ask them for help picking the perfect system.

You forgot about the 6 disc cd changer he added.
Didn't forget, but I haven't found an 6-disc changer with iPod control that fits the car specified either. Here's a 6-disc CD changer that will fit the car, though: Pioneer CDX-FM687.
I suspect the mentality among car stereo manufacturers is that if you are going to attach an iPod then you probably aren't interested in multi-disc changers.
