Ultimately, the two games play pretty much the same, with the main difference in the gameplay coming from the fact that Guitar Hero games (from 3 and on at least) have a much more forgiving timing window.
Check out both of the set lists for the versions of Rock Band and Guitar Hero that you're interested in and see which game has more songs that you like/recognize.
