Whatever happens to Buckbeak after the Prisoner of Azkabann in the Harry Potter movies?
I loved the character, Buckbeak, but after the one movie he's in he never comes back, why? Will he come back for the last installment of the Potter series?

Well, m3po, I don't know if you have read all of the books or not. In case you haven't, though, I'll try to not spoil them for you.
Buckbeak ought to have made appearances in HP movies following Prisoner of Azkaban. After escaping with Sirius Black, he was being cared for by Sirius at his hiding place in his childhood home.
I haven't seen the first part of Harry Potter: Deathly Hallows yet, but - if the director of the movie sticks to the book, unlike some of the previous movies - Buckbeak should make an appearance. He should have made an appearance in Half Blood Prince, but much to my dismay, he was omitted. I sure wish the last HP movies stick to the book to the last dot, though!
