Cut 1 pound washed potatoes into thick country-style chips (wedges). Heat 3 cups of oil in a pan and cook potatoes in batches until lightly golden; drain on paper towels. Repeat with remaining potatoes.
Just before serving, RE-FRY the potatoes in batches until crisp and golden. Sprinkle with sea salt and malt vinegar. Delicious!
