The list comes from Microsoft's SKU list for OEMs and re-sellers. For those who are running the beta or RC version, most likely you installed "Ultimate", which may not be widely available to home consumers.
For general consumers order of popularity (for legally purchased versions) will probably be: Home Premium, Starter, Professional, Ultimate. Mostly depends on how many people start demanding it on new netbooks.

Although it had a lot of information and told you about the different editions of Windows 7 - it did not answer the question "What will Windows 7 NAME be shipped as?" not "What editions will be shipped out?".
