The "chinese" dish.
When it was new, it was considered exotic and fancy in the US after some time (early 1900s) - probably equivalent to sushi these days. Of course, the dish doesn't really exist in China, and is literally translated to "odds and ends"... if you were to ask a chinese person in china for chop suey, you'd probably get scraps or leftovers, if not confusion as to what you're asking about.
