The best breed of horse to pull a stagecoach hasn't really been around forever.
The Morgan horse has only been around since 1789, created by a New England Horseman Justin Morgan.

These horses quickly became the model for pulling coaches and buggies or plowing the field.
Morgan horses were very versatile with a great personality. They were the best multi-use horse for the 19th century.

The best breed of horse for pulling a stage coach was probably the Cleveland Bay. In practice whatever strong horses were available were used, and for rugged terrain mules were preferred. Overall, however, the best breed of horse for a purpose is one that has been bred for it. The Cleveland Bay was bred as a coach horse, which type of horse is bigger and stronger than a riding horse yet lighter and faster than a plowing horse. It originated in Cleveland in England, not the currently better known American city. Buffalo Bill Cody drove a team of four Cleveland Bays in his Wild West show.
