The balut egg is believed to have originated in China then moved into the Philippines. The eggs used for this are fertilized duck eggs. The eggs are allowed to develop until the embryo is approximately eight days old (though in other countries it can be up to 21 days where the chick is almost fully formed). The eggs are then taken from the incubator, cooked alive in their shells, and sold to restaurants and street vendors. They are considered an everyday food and can be bought all over in the Philippines.
The reason they can be hard to eat is the part of the egg that makes up the “egg whites” tends to become somewhat hardened like cartilage. Others find them hard to eat because of the knowledge they are eating a duck embryo.
